I actually havent used the Sennheiser just yet...do you like it? I hear alot of bad things about it, but i aquired it for free...so no complaints here. I'll let you know how it goes :) Are any of your demos done with that mic? Do you use a pop screen?

Hey James.
Noise reduction in Audition should be pretty easy. In your edit view, select some noise with your cursor (you might want to purposely record extra "silence"), and fire up the NR plugin, there should be a setting in there to "profile". Then select the whole track, and apply the NR plugin again. Play with some of the settings though, as NR can do serious damage to recordings.
For a more practical look at NR, I made this tutorial on basic editing with Audacity. Different software obviously, but same general principal.
